lb) mutton
- 1 cup
finely chopped onion
- 2
tablespoons ground ginger
- 2
tablespoons ground garlic
- 5
cardamoms
- 1 cup
yogurt
- 1 cup
ghee or oil
- 20
green chilies
- 2
tablespoons Keara water
- 1
tablespoons raising
- 2
tablespoons shredded almonds
- Salt, sugar
and lemon juice to taste
Cut moderate-sized
pieces of mutton.

In a cooking
pan heat oil and fry the onion brown. Add the meat, ginger, garlic, cinnamon,
cardamoms, yogurt, salt, ghee and 2 cups of water. Mix well, cover and cook
over moderate heat for about 25 minutes.

When gravy
thickens add the sugar and lemon juice to taste, simmer for about 45 minutes
stirring from time to time. Add the green chilies, raising and Keara water and
keep over very low heat for about 1 hour. Garnish with almonds.
Finally: Serve rezala
with Plain_Pulao, fluffy boiled rice, chapatti or paratha.
