Fried Mutton

Fried mutton
·       (Bhuna khashir mangsha)
          2kg (4lb) lean boneless                   
     1 tablespoons cuming seeds
     Mutton or lamb                               
     2 tablespoons peppercorn
     6 whole red chillies                               
      cardamoms
     1 tablespoons chopped ginger        
     4 sticks 2.5cm piece cinnamon 
     2 tablespoons crushed garlic          
     1 cup yogurt
     1 cup sliced oinion                         
     1 cup cooking oil
     1 tablespoons coriander seeds          
     salt to taste


Cut the meat into 250g (1/2lb) piece. In a saucepan place the meat, chillies, ginger, garlic oinion and Coriander.

Add 5-6 cups of water. cover the pan. Bring to a boil and simmer till meat in tender. Add salt and rest of the ingredients. Stir, cover and keep over a low heat until the water has been taken up. Fry meat stirring constantly for about 10-12 minutes, until oil separates out.

Finally: Serve hot with chapati parata,pulao or fluffy boiled rice.
