Ground meat kebab

- 1kg (2 lb) ground beef
and mutton
- ¾ cup cooking oil
- 2 bay leaves
- 2 cloves
- 3 cardamoms
- 2 sticks 2.5cm
chilies,cinnamon
- 4 green chilies, pared
- ¼ cup yogurt
- 1 teaspoon cumin seeds
- 1 teaspoon ground cumin
- 2 teaspoons ground
ginger
- 2 teaspoons ground
garlic
- 2 teaspoon ground
coriander
- ½ teaspoon ground black
pepper
- 1 teaspoon sugar
- Salt to taste
Combine
the bay leaves,cardamoms cinnamon,cloves green chilies and cumin seeds.
In a frying pan heat
oil, Fry the onion golden brown. Remove the pan from heat,Stir onion for 30
seconds, then take out the onion from the pan straining the oil. Return the pan
to heat, add the mixed spices into the remaining oil, Stir and fry lightly over
a low heat. Remove the pan from heat and drain out spices from oil. Grind the
fried mixed spices and fried onion together.Set aside.

Place the meat in the
pan, add rest of the spices, yogurt, sugar, salt and 1 cup of water. Cook over
a low heat till meat is tender. Fri meat till water dries up and oil separates.
Add the fried ground spices stir and keep over a low heat for 10 minutes.
Finally: Serve bhuna kebab with
parata,luchi or chapatti.
