Mutton Tehari
6-8 serving
- 700g (1 ½ lb) mutton
- ½ teaspoon ground black pepper
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground mace
- 1 tablespoon ground ginger
- 1 teaspoon ground garlic
- ½ cup chopped onion
- 3 sticks 2.5piece cinnamon
- 4 cardamoms
- ½ cup yogurt
- ¾ cup cooking oil
- 10 green chilies
- 500g (1lb) pulao rice or basmati rice
- ½ tablespoon sugar
- ½ cup yogurt
- Salt to taste
Cut the meat into small
cubes. Mix together the ground spices, onion, cinnamon, cardamoms, yogurt, oil
and salt. Add the meat,mix well, cover and cook over a low heat until mutton is
tender. Stir and fry meat till water dries up.

Add the chilies, rice,
salt, sugar, milk and 3 cups of hot water. Stir, cover and cook over moderate
heat(for about 18 minutes) till the water has been taken up and the rice is
cooked. Do not open the lid for half an hour after removing from heat.
Finally: Serve hot with
salad.
