Fried vegetable with Egg
4 serving
  • 500 g (1lb) snake-gourd
  • ¼ teaspoon ground turmeric
  • 3 tablespoons cooking oil
  • 2 tablespoons chopped onion
  • 1 egg, beaten
  • Salt to taste

Scrape or peel the snake-gourd. Pare lengthwise then slice thinly.


Heat the oil in a frying pan. Saute the onion, add the vegetable, turmeric and salt. Stir, add 2 tablespoons of water. Cover and cook until vegetable is tender.

Pour the beaten egg over the vegetable in the frying pan and stir. When the egg is cooked remove from heat.

Serve hot with boiled rice or bread.

Note:-- Shredded cabbage, radish, auberigine, are also good for frying with egg.
