Prawn coconut pulao
4-6 Servings
- 1 cup shelled fresh prawn
- 1 teaspoon ground turmeric
- ½ -1 teaspoon ground red chili
- 1½ teaspoon ground ginger
- 1 teaspoon ground garlic
- ½ cup finely chopped onion
- 1 cup thick coconut milk
- ½ cup cubes potatoes
- ½ cup shelled peas
- 4 green chilies
- 450g ( 1lb) pulao rice
- 1/3 cup cooking oil
- Salt to taste
Rinse rice and strain
water. Set aside.
Heat the oil in a
saucepan. Fry the onion light brown.Add the potatoes and fry for 3 minutes.Add
the prawns, salt and the coconut milk. Stir and boil for 4 minutes. Remove the
prawns with potatoes.
In the remaining gravy
add the ground spices and rice. Stir and fry for 3 minutes. Add salt and 3½ cup
of water. Bring to boil. Cover and simmer for 18 minutes. Add the green
chilies, prawns and potatoes. Cover and keep over very low heat for a few minutes.
Finally:Serve hot with salad.
